From the basics in music theory and composition to more advanced subjects, I'll always make sure learning is structured and paced appropriately. You'll learn many of the theoretical aspects of theory/composition as well as growing your own unique approach to learning about and writing music.
I use textbooks for beginners and have an extensive library of my own transcriptions, as well as my own Chord Dictionary(2,100 chord shapes). I usually teach one on one although I conduct many workshops at various folk and bluegrass festivals.

I primarily gear my lessons towards those who are willing to learn and practice. However my course would depend on the desired genres which the student is wishing to learn. For more classical/jazz/blues related genres I would mostly encourage sight-reading practice in addition to genre-specific techniques such as finger picking, complex chords, non-conventional time signatures, etc.
